Party coming up, need some software help.

Okay, so on Friday we’re going to have a bit of a party (as is everyone else, I’m sure) - starting at around 8 AM with myself and a few friends at one of my friends’ places.

 
Why 8 AM?  To watch this, this and this (which are all mine) on one of these, and then have a new year’s party.
 
And we don’t want to have to switch out the DVDs six times for all of the discs.  So here’s what I’d like to do:
 
The TV has DVI input, and the sound system is a digital THX 5.1 job, so I’m customizing a system just for this event: Pentium III 650, Radeon 7000 DVI, 256 MB of RAM and an SB Audigy 2.  It has two pretty quiet fans total, and will be run using an RF remote from the next room so as not to have its sound intrude upon our watching.  Oh yes, and we’re setting it up Thursday to set it up properly and to Pantone calibrate the TV.
 
What I’d like to do is to rip all of the DVDs to disk and first make it run as one long movie, and second to snip out the 20 minute fan club credits so that it can run from standard credit end to opening sequence, end on end.
 
So first: how do I rip the vob files to disk?
 
Second: how do I edit the vob files to make this work, or (preferably) how do I transcode to a stack of MPEG2 files (either one per chapter or one per disc) with AC3 audio streams so I can just throw it in Adobe Premier, massage it together and play it using any old media player?
 
PS: yes, I have a 160 GB disk that I’ll be using for this, and will either load the machine up with XP or 2K to play the movies.
